Introduction
Business Management Institute (BMI) Wine
and Food Experience, one of CMAA’s newest professional development programs,
is being offered September 29 – October 3, 2008, at the
Culinary Institute of America’s (CIA) Greystone Campus
in St. Helena, CA. Similar to the program offered in 2006 and
2007, the 2008 five-day program will be a combination of classroom
lecture, wine tasting of approximately 150 different wines
and hands-on instruction in the school’s teaching kitchens.
The course will also include a tour of the Greystone Campus,
dinner at the prestigious Wine Spectator restaurant, tours
and dinner at two of Napa Valley’s most noted wineries.
Program content has changed, allowing individuals who attended
the classes in either 2006 or 2007 to once again attend the
2008 program and receive 30 CMI credits.
Cakebread Cellars
Cakebread Cellars is located in Rutherford,
CA. The Cakebread family is recognized as one of the most
creative and successful winery families in the Napa Valley.

Pine Ridge
Pine Ridge specializes in producing wines that embody the
unique characteristics of the Napa Valley appellations in which
its 220 acres of estate vineyards are located. Since the winery
was founded in 1978, old world traditions have been fused with
innovative viticultural and winemaking practices. Pine Ridge
estate-bottled wines consistently receive critical acclaim,
with the 1999 Stages Leap District Cabernet Sauvignon ranking
among the top five wines in the world.
To find out what it takes to make a world-class
wine, the winemakers at Pine Ridge looked to the most esteemed
winegrowing districts of France for their answer and found
that the greatest of the great embrace three principles:
pride of ownership, profound stewardship of the land, and
a relentless dedication to quality. Building on the groundwork
laid by the founders, they set out with ardor and high aims
for their vineyard, winery and wines. Within a year of starting,
they rebalanced the vines and completely revamped the grape-handling
procedures. Every vintage since has been a testament to the
success of Pine Ridge’s
viticultural and enological pursuits.
CIA Greystone
Since 1995, the CIA at Greystone has provided continuing education
opportunities and career development programs for food, wine
and hospitality professionals. Today, the campus is expanding
its services to include food industry business solutions such
as custom programs and research development consultation. Education
courses include foundation and advanced studies as well as
certificate programs, supply training in the culinary arts,
baking and pastry arts, foodservice management and professional
wine development.
Along with state-of-the-art facilities, a renowned faculty
and a vast selection of innovative year-round
programs, Greystone hosts public cooking demonstrations, special
events, seminars and travel programs. The annual World of Flavor
seminar and conference attracts more than 600 industry specialists
each year. Recent additions to the campus include the Rudd
Center for Professional Wine Studies (where our classes will
be
conducted), the Chuck Williams Center
for Flavor Discovery and the Ventura Foods Center for Menu
Research & Development.
Visitors to the campus can dine at the school’s Wine
Spectator restaurant and shop at the Spice Islands marketplace
for cookware, bakeware, culinary tools and specialty food products.
