Portable Smoker & Uruguayan Grill

How has this idea enhanced your club's operation, etc.?

Our Executive Chef Michael Weisshaupt designed a strategy for 2022 to enhance the portability, quality and diversity of our outdoor dining options. He purchased two key pieces of equipment – a Portable Smoker and a Uruguayan Grill.

How was this idea implemented, and what have been the club members' reactions?

Using wood from our own property, the meat smoker, and the Uruguayan Grill allowed the team to overnight smoke meats and grill meats and fishes at new venues where previously this was not possible, including the golf courses, at the racquets facility, poolside at the aquatics center, the golf practice facilities and on clubhouse patios. Members appreciated the new offerings which were more diverse than in the past and this was also made available as a new amenity to banquets and catered events.
