At the Country Club of Buffalo, we developed an innovative Sunday night dining concept designed to elevate member engagement while maintaining the club’s commitment to quality and hospitality. Appropriately named Stack Shack, this experience blended creativity, customization, and approachability to reimagine the traditional club cookout. The concept invited members to build their own burgers, selecting from a variety of premium proteins, toppings, and accompaniments, allowing each guest to tailor their meal to personal preferences. To complement the culinary experience, members could pair their burgers with a classic milkshake or a handcrafted boozy shake, customized with the spirit of their choice. Each week, the culinary and beverage teams collaborated to feature a chef-driven specialty burger and a signature boozy shake, providing variety and anticipation for returning guests.

How was this idea implemented, and what have been the club members' reactions?

Stack Shack created a relaxed yet elevated atmosphere that was perfectly suited for warm summer Sunday evenings. The concept energized both the kitchen and bar teams, encouraging creativity and collaboration while maintaining consistency and execution. Importantly, the full à la carte menu remained available for members who preferred a more traditional dining experience, ensuring inclusivity across all member preferences. Overall, Stack Shack successfully balanced innovation with the club’s established dining standards. The program enhanced member satisfaction, encouraged repeat attendance, and demonstrated how thoughtful, interactive concepts can bring fresh energy to club dining while honoring tradition.
