Table 1915 Monthly Programming

How has this idea enhanced your club's operation, etc.?

After being introduced as a private dining experience, Table 1915 has expanded into a yearlong series of themed monthly dinners designed to bring members together around a shared table. Reimagined as a communal gathering, the series encourages members to meet new people, share conversation, and connect through a collective culinary experience—while preserving the intimacy, creativity, and craftsmanship that define Table 1915.

Enhancing Club Operations

Culinary Innovation as Culture: The series reinforces a culture of ongoing experimentation, pushing the culinary team to learn, adapt and stretch creatively throughout the year.

Accessible Excellence: By offering a monthly, small-group format, Table 1915 became available to members who might not otherwise book a full private dinner—broadening engagement and strengthening appreciation for the culinary program.

Member-Centered Storytelling: The themed approach created built-in anticipation and allowed members to experience the depth and range of the DAC’s culinary talent in ways that evolve month to month.

How was this idea implemented, and what have been the club members' reactions?

Implementation

A Year of Distinct Themes: Each dinner explored a focused concept—ranging from historic DAC menus and regional cuisines to artistic movements and chef-inspired tributes—giving members a new story and flavor profile every month.

Technique-Driven Excellence: Several dinners showcased advanced or traditional techniques rarely seen today. The standout moment was the October Canard à la Rouennaise, when the DAC’s historic duck press—discovered during the Main Kitchen renovation—was restored and used tableside for the first time in decades.

Collaborative Creativity: Each menu was developed through collective experimentation, with chefs sharing responsibility across courses—strengthening mentorship and elevating the team’s craft.

Thoughtful Pairings: Beverage menus featuring regional wines, thematic cocktails and curated nonalcoholic pairings were tailored to enhance each dinner’s narrative and deepen the overall experience.

Member Reactions

Members consistently described the series as immersive, educational, and unforgettable. Many noted the rare chance to witness classical techniques, engage with the chefs directly, and enjoy menus that would be difficult to replicate anywhere else.

Summary Statement

The Table 1915 Monthly Series transformed a signature concept into a dynamic, year-round expression of culinary artistry. Through inventive themes, classical technique, and thoughtful accessibility, it strengthens the DAC’s standing as a destination for exceptional dining—and deepens the connection between members and the culinary team that serves them.
