Constant Creativity - Nightly Alcohol Infusions

Description

We found a simple and exciting way to entice members to try new things in our upscale dining room: nightly alcohol infusions.

To create these infusions, we purchased a large tower infuser, invited the lead bartender to create custom recipes, and placed the infuser in a prominent location that is impossible for members to miss when entering the restaurant. The infuser combines one bottle of a spirit and fresh ingredients, the basis for specialty cocktails featuring our nightly alcohol infusion. The small batch production allows for many rotating flavors, promotes seasonality, and prompts members to ask what recipe is being made every single night.

Implementation

Since the program began, alcohol sales per person have increased, there is nightly excitement for what’s being made that evening, and the beverage program is more seasonal. Members have also felt encouraged to try other spirits they’ve previously thought they disliked. This program has become a valuable segue for conversations with members regarding adding new spirits and their vision of the future of our upscale dining room and its bar. The creativity of the nightly alcohol infusions has enhanced the dining room's brand and offerings. Members have really enjoyed the addition of this idea. It is a daily occurrence for the infusion to be a topic of conversation among tables, at the bar, or with the staff.
